LatinXNA-Empanadas Event
In October 2022, I joined a LatinXNA networking event focused on how cultures unite us. I shared how food brings people together—and how the empanada is a perfect example. Its origins are unclear, but versions of it exist across many cultures. From Latin America to Asia to the Mediterranean, the empanada—whether baked or fried, sweet or savory—carries stories of migration, adaptation, and tradition.
That night changed everything. At the time, I was working at the Walmart Home Office cafeteria and studying at Brightwater. The experience gave me the clarity and courage to leave my job and begin my journey as an independent chef.
Pride Block Party
In 2023, Chef Carlos Leon joined this vibrant annual event for the third time, celebrating Pride and bringing together more than 300 people in the spirit of inclusion and community. Organized by companies such as KCC, PepsiCo, KW Kellogg, Kellanova, P&G, Unilever, and others — all neighboring businesses in the city of Rogers, AR — the event transforms an ordinary workday into a joyful celebration of connection.
It’s a moment when badges and brands are set aside, and everyone gathers to honor Pride Month. For the occasion, Chef Carlos Leon has been preparing simple yet flavorful menus, thoughtfully crafted to serve a large crowd during a lively June lunchtime.
Each year, the event continues to inspire connection and pride, standing as a true testament to the power of food and community to bring people together — around the table and in celebration.
Lauren & Josh Wedding
My First Wedding Event – A Day to Remember
This was my very first wedding event, and I couldn’t be prouder. It took place at a beautiful house in Ponca, Arkansas, on a day filled with unforgettable moments!
The couple was looking for an authentic food experience that also met the dietary restrictions of their guests—mainly gluten- and dairy-free. After thoughtful planning, we landed on a Mexican-inspired menu that brought vibrant flavors and creative touches to the table.
The menu featured handmade blue corn tacos with Tri-Tip Beef and Chicken, served with Chef’s Mexican rice, vegetarian chile relleno, and a bowl of vegetarian frijoles charros.
*While there weren’t many photos taken that day, the flavors, memories, and connections made it truly special.
Kellanova’s Mother’s Day
For this corporate lunchtime event, I had the pleasure of serving a vibrant, Mediterranean-inspired menu that was both refreshing and full of flavor. Guests enjoyed Italian bruschetta, roasted garlic hummus, Mediterranean-style chicken, and a vegetarian zucchini lasagna. Sides included asparagus with Mediterranean salsa, a fresh and colorful pasta salad (pictured below), and warm, oven-baked focaccia bread. To complete the experience, we served infused waters—one with strawberry and lime-mint, and the other with cucumber and ginger—adding a cool and flavorful touch to the meal.
